I thought this would work well with my 5 qt mixer (Model KSM5). Wrong. The mixer labored with this hook. I checked the paperwork that came with the attachment, and it was clearly marked not to use for my particular model. Too bad, I had to return. Hopefully Kitchenaid will make one for the 5 qt. lift top mixer.

The dough hook that came originally with the kitchenaid does a better job both with white bread and heavier whole wheat dough. This hook leaves often unmixed flour on sides and at the bottom and provides no obvious (to me at least) benefit

I suspect that KitchenAid uses the burnished aluminum approach in order to keep weight down, while still looking “shiny” like stainless steel, but I wish they had a way to deliver a stainless hook without issue. This hook cannot be run through the dishwasher, is made of aluminum (I’m sure it’s not a huge issue in terms of reactivity with acidic mediums, due to the treatment, but I still find it irritating), and seems to work okay (though I wouldn’t call the dough-kneading behavior amazing). If you need a replacement for the stock part, then this will work, but the piece is nothing special.

I make a lot of bread, some of which i knead by hand and some of which i put through my kitchenaid. This spiral dough hook performs worlds above the standard “C” hook – i don’t know how i did without it for so long! It kneads bread very quickly, incorporating air properly and developing the gluten. Has greatly improved the texture of my machine-kneaded doughs.
When using this hook, be VERY careful not to over-develop your dough, as it is much more efficient than the “C” hook.
